Restaurante Fialho



Visited by tourists and Portuguese, Ambassador and champion of local gastronomy throughout the world, was founded in 1945 by Manuel Fialho and became a world reference when talking on “awakening of senses” by the Portuguese cuisine, designated as Alentejana. Situated in the historic centre of Évora, considered a world heritage site by UNESCO in 1986, "Fialho", commanded by firstborn, Amor Fialho, who does the honours and their prescription is overseen by the third generation of the family, Helena e Rui Fialho. Over seven decades, the Fialho family has been dedicated to the art of hospitality as the alentejano way, values for the good and genuine regional cuisine and excellent wine cellar. In the restaurant Fialho there are respect to raw materials valuing the authentic flavours of the Alentejo.

In a kitchen of flavours and knowledge, the tradition and the respect for what the Earth gives us, are words of order. Having the utmost attention and care on products used and in regional dishes, We can speak of emblematic dishes such as the pig cheeks in red wine or the fabulous Partridge Convent at Charterhouse. The perfect harmony between the genuine flavours of the Alentejo and knowledge of our team gives rise to a journey of culinary excellence. This trip has led the restaurant to consecrate himself as the most awarded restaurant of the region, where stands out the Golden Fork Good Bed Good Table the journal Expresso, won since the initiative exists. His medal of merit of the city of Évora is cited by several national and international guides recognizing as compulsory stop restaurant. Early this year the restaurant Fialho won the certificate of excellence of Tripadvisor, confirming to be a restaurant that appeals to diverse audiences.

Of the entries the story goes that the eggs of quail with paio, the chicken patties or Hare and the brave asparagus with eggs, never disappointed.
For the main courses include the Cation of coriander, the Black pork medallions, the Rice Pombo or the Partridge Convent at Charterhouse. To finish, save room for several Conventual desserts, as a Soaked Mourao and the Real clod of Évora, but the Cheesecakes and Tecolameco also cannot fail to be tasted. The long and well stuffed wine list, along with the delicacies of the House, make it one of the best Portugal experiences gastronómics .
